It’s almost Superbowl game day! 🏈 No matter who you are rooting for, Chiefs or Eagles, it’s all about the tasty snacks. Forgo the greasy food that puts you to sleep by halftime. This recipe will help keep you feeling fit on game day, and your friends won’t even know it’s healthy!
Ingredients
- 1 head cauliflower cut into bite-sized florets
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1 ½ teaspoons smoked paprika
- ½ teaspoon cayenne pepper
- 1 teaspoon garlic powder
- 1 teaspoon salt
- ½ teaspoon pepper
- 1 cup of Island Coastal Lager beer
- Avocado cooking spray
- ¾ cup hot sauce (like, Frank’s Redhot)
- 3 tablespoons butter melted
- 1 tablespoon of chopped parsley
Instructions
In a large mixing bowl, whisk together flour, baking powder, paprika, cayenne garlic powder, salt, and pepper. Pour in Island Coastal Lager, whisk mixture but don’t over-mix.
Toss the cauliflower florets in the batter, and gently stir to make sure batter coats all the florets. Take each piece out of the batter and place it on a wire rack with paper towels underneath to allow the excess batter to drip off.
Line the bottom of the air fryer with parchment paper, arrange florets in an even layer on rack, lightly spray the tops of florets with avocado oil cooking spray, and air fry at 375
°F for 10-12 minutes. While florets are cooking, melt butter and stir in hot sauce.
Remove florets from air fryer and toss in buffalo sauce, then return to air fryer and cook for an additional 10-12 minutes.
Remove from air fryer and arrange florets on a plate. Drizzle with leftover buffalo sauce, sprinkle with chopped parsley, and serve with ranch or blue cheese dressing.
